Paleo Banana Protein Pancakes
I like bananas and I like pancakes. If you do as well, take a look at this killer banana protein pancake recipe! To get to this recipe I simply started on a quest for pancakes. These had to meet a specific set of criteria:
- Grain free (Paleo friendly)
- Tastes good enough for the rest of the family to eat
- Keeps me full over an hour
- Easy to make
It took several iterations of this simple recipe to get it just right, but it is finally mastered and part of our regular rotation.
Ingredients are simple; what I have below is for 1 person, if you cook for 3 people, multiply by 3. If you cook for 2 people multiply by 2. You get the idea. As a plan ahead tip, just buy a few extra nanners than you normally would and allow them to ripen to be ready for pancake time. Just warn others in the house not to eat them!

Cook Time: 5 minutes
Ingredients: (For 1 Serving)
- 1 decently ripe banana
- (don’t use any banana that has green, make sure there is at least some browning on the peel)
- 2 eggs
- (ok to use egg whites if you’re not into whole eggs just cut back on the coconut flower a tad)
- 1/2 scoop vanilla protein powder
- (I use a whey isolate that is grass fed)
- 1/4 tsp cinnamon
- 1.5-2 tablespoons coconut flour
Instructions:
- Heat your pan on Low-Med. If using gas, I recommend Low. Spray pan with non-stick coconut spray
- Smash the banana in a small bowl or measure cup. Leave some lumps you don’t want it super smooth.
- Add the protein powder, eggs and cinnamon, mix lightly to keep it from getting too smooth
- Add the coconut flour one tablespoon at a time, judge the thickness to your liking.
- Pour into evenly sized pancakes (usually makes 4-5 per one person)
- Cover the pan with the lid to steam the pancake
- Cook 2-4 minutes, then flip (keep lid off after flipping)
- Top with your choice of fruit, syrup, etc
These banana protein pancakes are relatively sweet from the banana so you may not want to add any syrup at all. I like some raspberries or strawberries on top of mine.
